
During my walks about San Diego, I spy all sorts of cool art on utility boxes and electrical transformers. Most of the painted artwork is super creative and colorful. You never know what you’ll find!

I love eggplant prepared well in Greek or Italian dishes 🙂

My mom used to prepare it with some sort of batter and it was actually edible!

I used to make eggplant pizza, with sauce and cheese on top of battered eggplant. I’ve had it in stews/soups, and some Greek dishes, too, and liked it.

These are terrific — it’s obviously a widespread idea. We now have a well-established history of murals on Bell (telephone) boxes and traffic signal boxes here; a Long Beach friend sent me photos of utility boxes there; now I see this wonderful art in San Diego as well. It’s such a good idea: looks good, and cuts down on vandalism as well.
